This lockdown has been hard for everyone, but has been more painful for the chatoras. But here is the good news. We found the perfect food channel to end our street food cravings. Ragda Chaat | Vatana Chaat Follow @thebriskkitchen Ingredients Cooking oil – 1 tablespoon Mustard seeds – 1 teaspoon Hing – 1 pinch Chopped onion – 1 large Chopped tomato – 1 large Salt – 1/2 teaspoon Turmeric powder – 1/2 teaspoon Coriander powder – 1/2 teaspoon Chilli powder – 1/2 teaspoon Boiled vatana – 100 grams Water – 100 ml Lemon juice – 1/2 lemon Chopped coriander – 1 teaspoon Curd – 3 teaspoon Dhaniya pudina chutney – 2 teaspoon Imli chutney – 2 teaspoon Chilli powder – 1 pinch Chaat masala – 1 pinch Sev – 2 tablespoons Crushed papdi – 2 Chopped coriander Curd Chilli powder Preparation In a kadhai add cooking oil, mustard seeds, hing and chopped onion. Cook for 2 minutes till the onions become soft and translucent. Add chopped tomato, salt, turmeric powder, coriander powder and chilli powder. Mix well and cook for 1 minute. Add boiled vatana and mix well. Cook for 5 minutes. Add water and cook for another 4 minutes. Add lemon juice, chopped coriander and mix well. Transfer to a serving bowl. Veg Fried Momo | Veg Momo Follow @thebriskkitchen Ingredients Maida – 200 grams Cooking oil – 1 tablespoon Salt – 1/2 teaspoon Water – 100 ml Cooking oil – 1 teaspoon Chopped green chilli – 1 Grated ginger – 1 tablespoon Grated cabbage – 100 grams Grated carrot – 50 grams Chopped green capsicum – 25 grams Chopped red capsicum – 25 grams Half boiled peas – 25 grams Salt – 1/2 teaspoon Black pepper – 1/2 teaspoon Water – 500 ml Cooking oil – 500 ml Preparation In a large mixing bowl add maida, cooking oil, salt, water. Knead the mix to a dough and keep aside. In a kadhai add cooking oil, a chopped green chilli, grated ginger and sauté. In a mixing bowl add grated cabbage, grated carrot, chopped green capsicum, chopped red capsicum, half boiled peas, salt, black pepper and mix well. Add the sautéed ginger and chillies to this bowl. Mix well. Roll out portions of the dough and flatten using a rolling pin. Place the veg stuffing in the centre of each and seal the edges by pinching the dough lightly. In a large/deep pan add water. Place a steel sieve to create height and place a bamboo steamer atop the sieve. Place the dumplings in the steamer and steam for 30 minutes. Keep aside. Vada Pav Follow @thebriskkitchen Ingredients Besan – 200 grams Chilli powder – 1/2 teaspoon Salt – 1/2 teaspoon Hing – 1/4 teaspoon Baking soda – 1/4 teaspoon Turmeric powder – 1/4 teaspoon Corn flour – 1 teaspoon Water – 150 ml Vegetable oil – 4 tablespoons Mustard seeds – 1 teaspoon Coriander seeds – 1 tablespoon Ginger garlic green chilli paste – 1 tablespoon Curry leaves – 12 Salt – 1 teaspoon Chilli powder – 1/2 teaspoon Turmeric powder – 1/2 teaspoon Mashed boiled potatoes – 500 grams Chopped coriander – 2 tablespoons Vegetable oil – 250 ml Pav – 2 pieces Mint coriander chutney Vada pav chutney Preparation In a large mixing bowl, add besan, chilli powder, salt, hing, baking soda, turmeric powder, corn flour and water. Mix well to an even consistency and keep aside. In a pan add vegetable oil, mustard seeds, coriander seeds, ginger garlic green chilli paste, curry leaves, salt, chilli powder, turmeric powder, mashed boiled potatoes, chopped coriander and mix well. Roll into balls, dip in the besan batter and deep fry on hot oil till golden. Slice open the pav along the centre and apply mint coriander chutney and vada pav chutney. Stuffed Bread Pakoda Follow @thebriskkitchen Ingredients Besan – 250 gm Turmeric powder – 1 teaspoon Salt – 1 teaspoon Water – 200 ml Vegetable oil – 1 teaspoon Mustard seeds – 1/2 teaspoon Cumin seeds – 1/2 teaspoon Chopped garlic – 1 teaspoon Chopped ginger – 1 teaspoon Coriander seeds – 1 teaspoon Chopped onion – 1 small Salt – 1/2 teaspoon Chilli powder – 1/2 teaspoon Turmeric powder – 1/2 teaspoon Chopped coriander – 2 teaspoons Boiled potato – 5 Bread – 6 slices cut in half Tomato sauce Mint coriander chutney Cooking oil – 500 ml Preparation Besan batter In a flat mixing bowl add besan, turmeric powder, salt and water. Mix well and keep aside. Stuffing In a pan heat oil. Add mustard seeds, cumin seeds, chopped garlic, chopped ginger, coriander seeds and chopped onion. Sauté. Add salt, chilli powder, turmeric powder and chopped coriander. Mix well. Add boiled potatoes. Mash and mix well. Cut bread slices in half. One one half spread tomato sauce. On another half spread mint coriander chutney and place a portion of the stuffing. Place the tomato sauce half on top and press gently together.
